Undhiyu is a Gujarati dish prepared with vegetables like brinjal, sweet potato, potato, green bean and many more. Dumplings or balls made with gram flour and spices are also used in preparation of this mixed vegetable dish. Garlic chutney is used to flavor the dumplings as well as the gravy. It is traditionally prepared in an earthen pot called “matlu”. It is often served with ‘poories’ and ‘shrikhand’.
