Sambal is a chili paste used as sauce in many dishes. Many varieties of chili peppers are used to prepare it. Other ingredients such as garlic, ginger, scallions, shallots, shrimp paste, lime juice are also used to enhance the flavour of sambal. It originated in Indonesia but nowadays is used all around the world. Adyuma, Cayenne pepper, Bird’s eye chili and Cabi taliwang are some of the varieties of chili peppers used in sambal. It is very spicy and hot. People who can’t eat spicy food often try to balance it by adding lemon juice or vinegar in it.
