Kesari bhat is a desert from south India. It is prepared with semolina, milk, sugar, ghee, water and dry fruits. Dry fruits like cashews, almonds and raisins are added to enhance the flavour. In north India it is referred as sheera or halva. Semolina is properly roasted in ghee to prepare this dish and it gets that yellow-brown-orange colour because of roasted semolina and kesar. In some variations of this dish bananas, mangoes and coconuts are also used. People also substitute semolina with rice as per their preference and availability of ingredients.
